עמילאז הוא אנזים המפרק את העמילן למולקולות גלוקוז. נמצא בעיקר בלבלב ובבלוטות הרוק. לעמילאז תפקיד עיקרי בעיכול סוכרים, בעיקר עמילן וגליקוגן. אנזים זה הוא חלק מאנזימי מערכת העיכול המסייעים בעיבוד המזון כדי שיוכל להיספג דרך מערכת העיכול לדם. ניתן לבדוק את רמת האנזים בדם או בשתן
