Invertase

Function

Invertase (INV) catalyzes the hydrolysis of sucrose into glucose and fructose. INV is produced by bees which use it to make honey from nectar. INV is used in the food industry to produce fructose which is sweeter and does not crystallize easily. Cell-wall INV is crucial for metabolism, growth and differentiation in plants.
