ליפאז הוא אנזים אשר מזרז הידרוליזה (פירוק) של שומנים (ליפידים) הליפאז הוא חלק מקבוצת אנזימים שנקראת אסטרזות – אנזימים שמפרקים אסטרים.
בבני אדם, הלבלב משחרר ליפאז אל תוך המעי הדק, האחראי לפירוק השומנים שבמזון וספיגתם בגוף. הלבלב משחרר אנזימים נוספים אל המעי הדק ובהם עמילאז ופרוטאז. כמויות קטנות של האנזים מופיעות גם ברוק.
רמות הליפז בדם עולות במחלות חריפות של הלבלב, באבצסים של הלבלב, בטראומה ללבלב, במחלות ממאירות של הלבלב, בחסימה של דרכי המרה, ובהרעלה מתרופות שהן טוקסיות ללבלב. הליפז עולה גם במרבית המחלות הדלקתיות של אזור הבטן, כיס מרה, ואי ספיקת כליות
